Microbiological quality characterization of raw milk in properties from the municipality of Parintins/AM
Abstract
The objective of this study was to evaluate the microbiological characteristics of raw milk produced in some properties in Parintins, State of Amazonas. Cluster analysis, where three groups designated A, B and C were created, was performed, followed by descriptive statistics analysis. All groups showed contamination by thermotolerant coliform, with means of 708, 322.1 and 780 MPN mL–1 for groups A, B and C, respectively. The means of yeasts in CFU mL–1 were 2.1 × 103 for group A, 2.5 × 103 for group B and 1.0 × 104 for group C, while the means of molds were 4.5 × 101 for the group A, 13.0 × 101 for group B and 5.0 × 101 CFU mL–1 for group C. The presence of Salmonella was detected in two properties of group A. The milk samples analyzed proved to be inappropriate for consumption in its fresh form, characterizing health risks to consumers of raw milk from Parintins, State of Amazonas.
